Jamie Oliver’s frozen yogurt cake - ideal for the summers and for the weight conscious plus it is super easy to make.

Scared of eating cakes because of the calories ? Don't worry this delicious alternative only  has 59 calories. If a cake could be called healthy , this is it and it is delicious! It is extremely easy to prepare and only requires fruits and yogurt. You can use any seasonal fruit for this recipe. There’s nothing artificial used to prepare this yogurt cake—the fruit brings colour to it anyway. 

Ingredients

  • 250 g strawberries
  • 16 tablespoons natural yoghurt
  • 250 g bananas
  • 250 g raspberries
  • 250 g blackberries
  • seasonal berries

 

Method

  1. Line a loaf tin with clingfilm.
  2. In a blender or food processor, blitz the strawberries with 4 tablespoons of yoghurt. Pour the fruit mixture into the tin and place in the freezer for at least 15 minutes.
  3. Meanwhile, rinse out the blender or food processor, and blitz the bananas with another 4 tablespoons of yoghurt. Add this layer to the tin and return it to the freezer.
  4. Repeat with the other 2 types of fruit and remaining yoghurt.
  5. The cake is ready as soon as the top layer is hard, but you can keep it in the freezer as long as you like. Slice the cake while still frozen and serve with berries.

Suggestion: Add a bit of Green colouring to an additional layer of banana for the festive season.
